55 meat processing facilities across the United States are authorized by the USDA under a kosher religious exemption, which permits slaughter and processing that follows kosher dietary requirements.

Kosher facilities are concentrated in Texas (6), Pennsylvania (5), Kansas (4).

Kosher slaughter and processing follows Jewish dietary law. Under the exemption, these facilities can serve producers, kosher-observant consumers, and communities that require kosher handling — most also operate under USDA inspection for their conventional production.
