What affects how much meat you take home

  • Cut style. Boneless cuts mean more trimmed-out bone and less take-home weight; bone-in roasts and steaks weigh more.
  • Trim and fat. A tight trim — or grinding the fat into burger — keeps more weight than cutting it all away.
  • Shrink. Meat loses moisture while hanging and aging, which lowers the final weight.
  • What you keep. Some people take the liver, heart, and other organs home instead of leaving them with the processor.

Deer yield questions

How much venison will I get from a deer?

With the defaults on this page — live weight minus 26% bone, 15% organs, and 9% head — a 160 lb live deer estimates to about 80 lb of boneless venison and grind. Field-dressing care and whether you keep cuts bone-in move the total.

Field-dressed weight vs. boneless meat — what's the difference?

Field-dressed weight drops the head, hide, and organs at the kill site, commonly around three-quarters of live weight. Boning and trimming at the processor reduce it further to the meat you actually freeze — about half of live weight with the defaults here.

Does the calculator account for the hide?

Yes — the hide, head, and organs are treated as removed (the organs and head lines). If you field-dress the deer before it reaches the processor, those pounds are gone before it ever hits the scale.
